Low Carb Zucchini Bread Recipe

Would you like to bake some zucchini bread with me? Here is the recipe.

2 cups almond meal
2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup butter or coconut oil, melted
4 eggs
1/8 cup water
stevia to taste (I used 3 scoops)
1.5 cups grated zucchini


Put some almonds in your food processor and grind them up 'till they look like this. Measure out 2 cups and store the extra in the fridge.


Add the rest of your ingredients and run the processor until they are well combined. Taste. Add more stevia if needed. Pour into a bread pan. You can bake it in muffin cups also. Bake at 350 for 30 minutes(15 for cupcakes).


While you are waiting clean up your mess!


Here they are. I made a double batch so the children could have some for snack.


Let cool a bit and then enjoy.
